Reef and Rainforest Roast Potatoes

Collect Ingredients
8 medium waxy potatoes peeled & quartered
1 heaped tablespoon Daintree Spice Co’s Reef and Rainforest Rub
1 knob of unsalted butter
1 tablespoon of rendered duck fat
Salt and pepper
Method
- Preheat oven and a nonstick roasting pan to 220°c
- Place potatoes in sauce pan and just cover with cold water
- Bring to the boil and reduce the heat and simmer for 1 minute turn off the heat allow the potatoes to sit in water for 4 minutes
- Drain the potatoes and return to the pot sprinkle with the Reef and Rainforest Rub and toss to coat, replace the lid and shake the pot to soften the outsides or the potatoes
- Remove the roasting pan from the oven add the duck fat and butter then the potatoes season with the salt and pepper and return the pan to the oven
- Roast the potatoes for 20 minutes remove the tray and turn the potatoes roast for a further 20 minutes
- Remove potatoes from the tray and serve immediately
