Dukkah Crusted Lamb Rack

Serves 8
Collect Ingredients
1 50 g packet Daintree Spice Co’s Dukkah
4 lamb racks trimmed (8 ribs per rack)
1 cup fresh breadcrumbs
3 tablespoons fresh flat-leaf parsley finely chopped
2 tablespoons Dijon mustard
1 whole egg beaten
2 tablespoons rice bran oil
Daintree Spice Co’ Lemon myrtle Salt & Pepper
Method
- Preheat oven to 200°c
- Heat a heavy based roasting pan and when hot add the oil and seal the racks on the fat side for approximately 2-3 minutes remove season with Lemon Myrtle Salt & Pepper and allow to cool
- Stir together the dukkah with the breadcrumbs, parsley and egg until combined.
- Paint the sealed side of the racks with the mustard
- Divide the dukkah mixture into 4 and coat each rack with the mixture gently pressing to adhere
- Bake in oven for approximately 25 minutes for medium, more or less depending on your taste
- Remove from the oven and allow to rest 5-10 minutes
- Serve with your favourite vegetables, potatoes or salad
