Preparation time: 10 minutes, plus marinating

Cooking time: 60 minutes

Serves 6

Collect Ingredients

3kg of Australian pork spare ribs

1 Packet of Daintree Spice Co’s Smoky BBQ Rub

2 Heaped tablespoons Australian Mustard

2 Tablespoons peanut oil

Method

  1. Prepare the ribs by peeling off the silver skin (membrane)  on the underside of the ribs & dry throughly

  2. Mix together the oil & mustard, using a brush lightly coat the ribs with this mixture.

  3. Now completely cover the ribs with the Smoky BBQ Rub and massage the surface of the ribs. Place the ribs on a rack in a plastic container, cover them, and put in the fridge for a few hours or preferably overnight.

  4. To cook the ribs, preheat the oven to 140°C and bake for 60 minutes. Check if they are done by cutting one of the racks in half. Depending on the thinness of the ribs and the speed of your oven the ribs may need up to half an hour more.

  5. When they are done, cut the ribs into portions serve with your favourite slaw salad & bbq sauce
