Cucumber & Red Onion Raita

Preparation time: 10 minutes

Serves 6 as an accompaniment to an Indian meal

Collect Ingredients

2 cups of full fat yogurt

2 tablespoons of Daintree Spice Co’s Dukkah

1 medium red onion shredded

1 continental  cucumber peeled, halved lengthwise, 

deseeded and diced

2 large green chilies deseeded and finely chopped

12 mint leaves chopped

20 coriander leaves chopped

1 lime juiced

Daintree Spice Co’s Lemon Myrtle Salt and Pepper seasoning to taste

Method

Combine all if the ingredients except the Dukkah & mix well and season to taste

Transfer to a serving bowl and completely cover the top with the Dukkah
