Sautéed king Prawns with Chilli and Coconut

Preparation time: 5 minutes

Cooking time: 25 minutes

Serves 6 as a small entree or 10 as part of a shared meal

Collect Ingredients

1 tablespoon Daintree Spice Co’s Chilli Coconut Rub

1 tablespoon vegetable oil

25g unsalted butter

500g peeled green king prawns peeled and deveined leaving tails on

1 Medium red onion finally chopped 

3 Large vine ripened tomatoes skin and seed removed and diced

! Cup of double or thickened cream

2 tablespoons chopped coriander

Daintree Spice Co’s Lemon Myrtle Salt and Pepper to taste

METHOD

  1. Toss prawns in Chilli Coconut Rub and massage well
  2. Heat a heavy based pan when hot add oil, then add prawns and sauté until lightly browned and half cooked, Remove from pan and set aside
  3. Add the butter to the pan when it is foaming add the red onion and cook for 30 seconds, add the tomato and continue cooking for a further 30 seconds stirring continuously 
  4. Add the cream and reduce by half
  5. Return the prawns to finish cooking on a low heat approximately 2 minutes. Stir in the coriander and serve immediately with steamed jasmine rice
